Echo Mountain Colorado ski area and park is one of the best hills for families and beginners. Both my son and daughter learned how to ski there and for reasonable prices. You can buy a "6-pak" of lessons for snowboarding or skiing for less than $200. After the lessons, my kids became pretty good skiiers. I would have spent a few hundred dollars more at any of the other resorts.
Their cafeteria has very reasonable prices on food and they make it comfortable to bring your own lunch. Many times my wife would bring her laptop and get some work done while our kids were in lessons. The views from the cafeteria are amazing!
I never encountered traffic on the way up there and you'll love driving through the quaint mountain roads. There are two stops on the way where you'll want to get pictures. The first is right after exit 254 on Interstate Highway 70. You can pull over and get an amazing panoramic view of the Rocky Mountains. It's great if you have friends or family visiting.

The other great place to stop is on Highway 103 near mile-marker 22. On a clear day, you can see right into Denver. A more powerful camera will get you a better shot.

Your guests will love this drive in both winter and summer and it's not too far from Denver. Whenever I'm limited on time and I have guests who want the "Colorado" experience, then I take them on Highway 103. You'll also want to stop at Mt. Evans since you're in the area.
Echo Park is also great for snowboarders who love to jump or people who want to zip up after work and get a couple of hours of skiing in. There are lights for night skiing and they play music while you're cruising down the slopes.
